FAIL.




i could never have imagined that attempting to make a simple reduction sauce would end up like a junior high chemistry lab; specifically, the one where the black carbonized choade erupts up out of the beaker when you burn sugar and water, subsequently filling the whole lab with a choking, stinking, suffocating smoke.


yeah.  so, moral of the story: honey + soy sauce + orange juice (which, in theory, might have turned out like i imagined it to be...a sweet little glaze to drizzle over some panko-battered chicken breast to serve with peanut sesame noodles)...
ehhh, not so much.

  1. I use this sort of thing all the time with mahi filets. I'll sautee some garlic and thai chili pepper (or you could use red pepper flakes) then add equal parts honey and soy sauce (depending I usually do 1/2c of each) until it reduces into a nice syrup. I imagine the oj would be nice, but you probably don't need very much. Raven loves it, maybe you should give it another whirl. Cheers!

  2. i suppose my fatal flaw in this master plan was that i didn't use the same honey to soy ratio. oopsies. i'll definitely take your advice next time i make it. grazie!
